The Grapefruit Pimm's Mule is a refreshing cocktail that blends the bold flavors of tequila with the fruity notes of Pimm's No. 1 and the citrus zing of grapefruit. The addition of soda water adds a light, effervescent finish, making it a perfect drink for warm evenings or a spirited brunch. Garnished with a sprig of rosemary, this cocktail not only tastes great, but looks stunning too!
Ingredients

- 2Pimm's No. 1
- 3Grapefruit
- 4Soda Water
- 5Ice
- 6Rosemary Sprig

Start by juicing the grapefruit to yield about 60ml (2 oz) of juice.

In a shaker, combine 45ml (1.5 oz) of Tequila Blanco and the freshly squeezed grapefruit juice.

Add 30ml (1 oz) of Pimm's No. 1 to the shaker.

Fill the shaker with ice and shake vigorously for about 15 seconds to chill and combine.

Strain the mixture into a highball glass filled with ice.

Top with soda water (approx. 90-120ml or 3-4 oz) to add some effervescence.
